Cooking with Dana - Crispy Mozzarella Crusted Chicken

But let's be real, who doesn't like meals delivered right to your door?Today I'm sharing the Crispy mozzarella crusted chicken recipe with roasted broccoli and buttery couscous. AND there's a special treat for readers who make it to the end. Don't skip ahead, I'll know if you do...lol

Let's get right into this meal! First, I preheated my oven to 425 and washed all of my veggies and produce. In a bowl, I mixed the panko crumbs, mozzarella, italian seasonings, salt, pepper, and a little olive oil together. I pat my chicken dry with paper towels and seasoned both sides with salt, pepper, and old bay(I put old pay on everything lol but obviously, you can season your food with whatever you want). Then I put the chicken on a baking sheet and put an even layer of sour cream on both pieces and packed the mixture into the chicken. Then I tossed the broccoli with some salt, pepper, and (you guessed it) old bay, along with some oil and placed them on the other side of the baking tray and popped it into the oven for 20 minutes.

While that was cooking, I melted some butter to a pot, added my couscous, some salt, water, and a veggie stock concentrate. I cook my couscous for about 7 minutes and then it's done. I added some lemon juice and pepper, plated everything, and bam! A delicious meal in less than 30 minutes.
