Vegetable Minestrone Soup with Garlic Parmesan Bread

I started with my freshly washed vegetables. I chopped up my carrots, onions, garlic, potatoes, and scallions. (Hello Fresh provided everything except the potatoes. I had some in my fridge and decided to add them into my soup). In a large pan I added some oil and added all of my veggies, some celery salt, and some italian seasonings and cooked that for about 6 mins on medium heat. While that was cooking up, I had another pot with water boiling. Once the water started to boil, I added in some elbow macaroni. I like to cook my pasta for about 10 mins or less because I like my pasta al dente, but you can cook yours however you'd like. .

Moving back to my veggie mixture, I add in some tomato sauce, some vegetable stock, and about 2 cups of water and bring my mixture up to a boil. Once that's boiling, I added some cannelloni (white) beans and reduced the heat. Stir everything and simmer until everything is nice and tender. Then I carefully added in my pasta and continued to stir and get everything well combined. I added salt, pepper, paprika, and seasoned salt to taste.

For the garlic bread, I halved my ciabatta bread and popped it in the toaster. When it came out, I rubbed a cut clove of garlic on it, spread some butter on top, and sprinkled some parmesan cheese on top. I popped the bread into the microwave for about 30 secs so that my bread wouldn't get soft and soggy, but just enough to melt the cheese and then I halved the pieces diagonally. Then I put my coup in a bowl and enjoyed! This came out really good and flavorful and I don't think I can eat bread without garlic and parmesan ever again lol. I hope that you enjoyed this recipe.
